Easy Snowball Cookies Recipe with Einkorn Flour
More than any other holiday recipe, I’ve been looking forward to making these cookies. The buttery goodness matched with nuts and powdered sugar is melt in your mouth wonderful! I hope you enjoy these too!
This recipe has so many memories for me. It’s adapted from a recipe my Mom makes every Christmas. I have numerous memories of standing in our tiny kitchen rolling snowballs (or Russian Tea Cakes as we called them) and then winding up with powdered sugar on my face. I ate just a few. Maybe.
They have several different names. Perhaps you know them by Russian Tea Cakes as we do or Mexican Wedding Cookies. No matter what you call them, their bite size will leave you with a smile and possibly some powdered sugar on your face too.
The Powdered Sugar
The sugar makes this recipe but I don’t just use any powdered sugar. Because of the fact that corn is one of the main GMO foods made in the U.S. I purposely avoid any powdered sugar that isn’t Organic. In addition, corn products can also carry mycotoxins and cause blood sugar imbalances. I was extremely happy to find that Azure Standard doesn’t even use corn in their powdered sugar! They grind their cane sugar six times, then add tapioca starch to prevent caking. The result is a very tasty sugar.
Einkorn Flour
I already knew einkorn flour went well with butter but the great thing about this recipe is the combination of nuts. You see, einkorn has a slightly nutty flavor itself, making this a natural cookie for it to make. As I’ve mentioned before, einkorn has a very high nutrient density as well as protein amount. Though all purpose flour has lowered nutrient density, this einkorn still has much higher protein than most other flours where the germ has been removed (all purpose flours). The Nuts
While you don’t have to use nuts in this recipe, I really do think they MAKE the recipe. My favorite nuts to use are pecans, walnuts and macadamia nuts. I used macadamia nuts in the recipe pictured here and loved the creamy flavor of them combined with butter. Mmm! Feel free to use what you have.
The Ingredients
Dry Ingredients
2 3/4 Cup All-purpose Einkorn Flour
1/2 teaspoon Salt
Wet Ingredients
I Cup Softened Butter
1/2 Cup Powdered Sugar
1 teaspoon Vanilla Extract
Other Ingredients
- 3/4 Cup Chopped Nuts (This can be optional if you don’t like nuts)
- Extra Powdered Sugar for Rolling
Einkorn Snowball Cookies
Melt in your Mouth Buttery Cookies Rolled in Powdered Sugar.
Ingredients
- 2 3/4 Cups All Purpose Einkorn Flour
- 1/2 Teaspoon Salt
- 1 Cup Softened Butter
- 1/2 C Powdered Sugar
- 1 teaspoon Vanilla
- 3/4 Cup Chopped Nuts ( I like Pecans, Walnuts or Macadamia Nuts)
- Extra Powdered Sugar for Rolling
Instructions
- Mix together your Butter, powdered Sugar and vanilla until creamy. Sift in flour and salt. Add in your chopped nuts and mix into a ball.
- Chill dough for at least one hour before baking. Roll into balls about 1 1/4 inches in diameter.
- Place on parchment lined baking sheet 2 inches apart from each other. Bake 10-12 minutes at 400 Degrees Fahrenheit until set but not brown.
- Let cool 15 minutes before rolling in powdered sugar.
Notes
Feel free to sift extra powdered sugar over tops of cookies before serving.

- Chill dough for at least one hour before baking. Roll into balls about 1 1/4 inches in diameter ( Confession: I might’ve made mine a bit bigger than this). Place on a parchment lined baking sheet 2 inches apart from each other.
- Bake 10-12 minutes at 400 degrees Fahrenheit until set but not brown. Let cool 15 minutes before rolling in powdered sugar. You want to roll them when they’re cool enough to touch but still a little warm.
It’s that simple. Now eat and enjoy! These are also a great tea party cookie so don’t lose the recipe when spring comes around.
How to Freeze Cookie Dough
You can freeze this dough in two different ways. Check out the cookie making video on Youtube to see how I freeze these in a disc shape.
Shape into Balls and Freeze
First shape the dough into your 1 1/4 inch balls, then place in an airtight container and store in the freezer for up to three months. Place in the refrigerator the night before baking to thaw.
Shape into a Disc and Wrap
Flatten your cookie dough into a disc shape and double wrap with plastic wrap. Then right the date on your dough before placing in the freezer.
Note: You can also freeze baked cookies by placing in an airtight container or freezer bag. Cookies can retain flavor for up to three months but check them often after one month.

Can I make all-purpose flour from grinding the Einkorn berries ?
Whole grain comes straight from grinding the berries and all-purpose has had the wheat germ removed. Some people do this by hand by sifting the flour multiple times but it’s quite time consuming for little results. You can also try using whole grain einkorn flour but add about 1/4 cup more.
