These fresh ground flour scones are a breakfast favorite and pair wonderfully with a hot cup of tea, coffee or creamy cocoa! Since we began fresh grinding einkorn flour, these scones are a constant request. The nice thing about einkorn grain is the whole wheat flavor still is quite tasty without the “bitter” bite I’m used to from modern wheat.

Scones are a comforting food when served on a pretty plate on a cold winter day. There are so many fun variations to scones, they are never boring and can please anyone with the varied flavor additions.

What is Einkorn?

Whether you are new to the grain or are already using it, einkorn is a wonderful tasty grain that is different than modern wheat and has many nutritional benefits.

There are several significant differences between einkorn wheat and modern wheat.

Einkorn is a form of wheat but in many ways, it’s so far from it. You see, einkorn is the mother of all modern wheat. ALL wheat hybrids have actually developed from the “mother” einkorn wheat. Einkorn is the form of wheat that has stayed the same for thousands of years. That’s hard to do in a gardening world. Here’s why. When a gardener plants two seeds of similar qualities, for example, a large bean and a small bean, they pollinate each other. The result is a new species of bean formed that season. This is called a hybrid. As all other wheat varieties are hybrids, Einkorn IS NOT.

This nutritious grain has been proven to help maintain blood sugar levels, and also assist in gut health. Using einkorn four for sourdough based foods has also shown to be anti-inflammatory so get out your sourdough starter!

I cannot stress to you enough, that if you want to receive the nutritional benefits of this flour you MUST learn to mill the actual grain. In 2020 our family made the investment in a Mockmill 100. Our reasoning was that whole wheat berries were cheaper than purchasing all purpose Einkorn ( which is pretty spendy compared to conventional wheat).

Ingredients

  • Whole Grain Einkorn Flour
  • Sugar (I’ve had good results with both cane and maple sugar)
  • Sea Salt
  • Baking Powder
  • Cold Butter
  • Cold Milk
  • Course sugar for sprinkling on top of scones ( I use turbinado)

Tips

When it comes to baking homemade scones, one might think that a lot of labor and time is involved. But you know what? It doesn’t take much work at all! There are a few simple but important tips that make the process easier and guarantee the best outcome for your scones!

Make sure the butter is cold: Cold butter helps to insure a nice rise and yummy texture! The cold butter will be grated, or cut finely, into the flour mixture and briefly worked until pea size clumps are formed.

Keep the scone dough cold when handling: The cold dough helps to prevent the butter from getting soft or melting which is key for getting that flaky crust and texture in your scones!

Mix the butter into the flour: You need to start by mixing the butter into the flour otherwise your scones can fail to form properly. Also the butter has to remain solid while making the scones. If the butter melts completely it will become more bread-like than scone-like.

Mix in Dry Ingredients

In a large bowl, mix together the flour, sugar, baking powder and salt.

Cut in Butter

Cut in the cold or frozen butter by either grating it or cutting it into pea size chunks.

Mix together until butter becomes a bunch of floured pieces in the bowl.

Add in Wet Ingredients

Pour milk into flour mixture and stir ingredients until they combine to form a sticky ball.

Form Scone Shapes

Place dough ball onto a floured surface and cut in half. On the first half, stretch dough out and fold in half. Do this about 5-7 times in order to create several flaky layers in the dough.

Line two baking sheets with parchment paper and preheat oven to 450 degrees Fahrenheit (232 degrees Celcius).

Form dough into a 3.5 x 10 inch rectangle.

Using a knife or bench scraper, cut the dough into thirds to create three square sections. Cut each square diagonally to create a triangle. Place each triangle on a baking sheet leaving at least 1 inch between unbaked scones.

Sprinkle tops with course sugar.

  • 3 1/2 Cups (420 g) Whole Grain Einkorn Flour
  • 1/4 Cup (45 g) Sugar ( I've had good results with both cane and maple sugar)
  • 3/4 teaspoon (5 g) Sea Salt
  • 2 Tablespoons (10 g) Baking Powder
  • 8 Tablespoons (110 g) Cold Butter
  • 1 Cup (225 g) Cold Milk
  • Course sugar for sprinkling on top of scones ( I use turbinado)

Instructions

  1. In a large bowl, mix together dry ingredients ( Flour, Sugar, baking powder, salt).
  2. Cut in butter by either grating frozen butter or cutting into pea size chunks. Mix together into butter becomes a bunch of floured pieces in the bowl.

  • Dried fruit
  • Raisins
  • Blueberries, raspberries, and other berries
  • Cream cheese chunks (with berries this makes a super yummy combo!)
  • Chives and other favorite herbs
  • Bacon
  • Shredded or chunked cheese
  • Chopped nuts

Here’s an example of making chocolate chip scones.

During the stretch and fold stage of making scones, sprinkle 1/3 cup chocolate chips (or as many as you desire!) over stretched out dough. Fold dough over chocolate chips and continue stretch and folds. You can also press in more on top with the sugar before baking.
