Why Einkorn Flour

Here’s what I like to teach on einkorn:

Einkorn is a form of wheat but in many ways, it’s so far from it. It is the mother of all modern wheat. ALL wheat hybrids have actually developed from the “mother” einkorn wheat. Einkorn is the form of wheat that has stayed the same for thousands of years. That’s hard to do in a gardening world. Here’s why. When a gardener plants two seeds of similar qualities, for example, a large bean and a small bean, they pollinate each other. The result is a new species of bean formed that season. This is called a hybrid. As all other wheat varieties are hybrids, Einkorn IS NOT.

Not messing with this grain’s DNA has also allowed it to retain it’s original nutrient density! Einkorn has 55% more vitamin B12 than modern wheat and 4 times as much B2 (riboflavin). It also has a whopping 3-4 times the beta-carotene and lutein as modern day wheat. If you want to look further into the benefits of einkorn check out THIS post.

Why Sourdough in this recipe?

If you have starter needing to be used up, this recipe is a great one to make! You can use active (fed) starter or sourdough discard. Either will work fine in this recipe!

Adding sourdough starter to your Einkorn cookies offers several nutritional benefits plus it gives a wonderful familiar ‘tang’ to the baked good.

Sourdough is the process of fermentation by the natural use of lactic bacteria acid which is the natural yeasts in the environment around us.

Sourdough supports gut health and digestibly by the process of breaking down the complex carbohydrates and proteins, and increasing the prebiotics which make it easier for our bodies to digest. It also feeds healthy bacteria to the gut, which in turn supports so many other aspects of our health!

Why Fresh Ground Flour

The truth is, you’ll get the most nutritional qualities out of the whole wheat einkorn whether your looking at it’s protein or nutrients. I like the graph shown on Jovial foods website as it’s a great visual for just how much more nutrition is contained in the einkorn. The important thing to remember is these numbers are the WHOLE WHEAT einkorn. When it states there’s 213% more lutein in einkorn than modern soft wheat, they are comparing soft wheat with the whole grain einkorn because whole grain is the most nutritious flour available.

I cannot stress to you enough, that if you want to receive the nutritional benefits of this flour you MUST learn to mill the actual grain. Several years ago our family made the investment in a Mockmill 100 flour mill. This helps to save money on our grocery bill AND gives added health benefits.

Milling your own flour isn’t just financially more efficient though, it also produces the highest nutrition in baked goods when you use FRESHLY milled grain as opposed to grain that’s been sitting on the shelf for months. This recipe may just be the most nutritious cookies you have ever baked!

Ingredients for Einkorn Sourdough Chocolate Chip Cookies

2 3/4 Cups Whole Wheat Einkorn Flour
1 teaspoon Baking Soda
1/2 Teaspoon Baking Powder
1/2 teaspoon Sea Salt
3/4 Cup Brown Sugar, coconut sugar or maple sugar
3/4 Cup Cane Sugar
1/2 Cup Butter softened
1/2 Cup Refined Coconut Oil, softened
2 teaspoons Vanilla
1 Large Egg at room temperature
1/4 Cup Sourdough Starter, active or discard
1 Cup Chocolate Chips

Yield: 2 Dozen Cookies

Ingredients

  • 2 3/4 Cups Whole Wheat Einkorn Flour
  • 1 teaspoon Baking Soda
  • 1/2 Teaspoon Baking Powder
  • 1/2 teaspoon Sea Salt
  • 3/4 Cup Brown Sugar, coconut sugar or maple sugar
  • 3/4 Cup Cane Sugar
  • 1/2 Cup Butter softened
  • 1/2 Cup Refined Coconut Oil, softened
  • 2 teaspoons Vanilla
  • 1 Large Egg at room temperature
  • 1/4 Cup Sourdough Starter, active or discard
  • 1 Cup Chocolate Chips

Instructions

  1. Heat oven to 350 degrees Fahrenheit.
  2. Beat together butter, coconut oil, sourdough starter and sugars. Add in vanilla and egg and beat for 3 minutes or until fluffy. The more the better!
  3. In separate bowl, stir together flour, baking soda, baking powder, and salt.
  4. Add dry ingredients to wet ingredients and gently fold in chocolate chips until just combined.
  5. Cover and allow the batter to rest for 15 minutes.
  6. Drop heaping tablespoon size balls of dough onto greased or parchment lined baking sheet. Bake for 10-12 minutes.
  7. Cool for 10 minutes before enjoying!

Directions for Making Sourdough Chocolate Chip Cookies

Heat oven to 350 degrees Fahrenheit.

Beat together butter, coconut oil, sourdough starter and sugars.

Add in vanilla and egg and beat for 3 minutes or until fluffy. The more the better!

In separate bowl, stir together flour, baking soda, baking powder, and salt.

Add dry ingredients to wet ingredients and gently fold in chocolate chips until just combined.

Cover and allow the batter to rest for 15 minutes. For a longer fermentation you can place the covered dough in the fridge for up to 2 days.

Drop heaping tablespoon size balls of dough onto greased or parchment lined baking sheet.

Bake for 10-12 minutes.

Cool for 10 minutes before enjoying!

Store in an airtight container for up to a week or freeze to enjoy later!

Tips for Making Einkorn Cookies

The Secret to Gooey in the Middle Cookies

The secret to cookies that have a little crisp on the outside and soft gooey insides is to take them out of the oven before they look all browned, The edges will look brown but the insides will be just barely cooked. Take them out at this point!

Pro Baker Tip

From Martha Stewart Living, to Southern Living, the consensus is clear: The best cookies are those which are chilled before baking. This allows the ingredients to reach the same temperature, enhance flavor, and increase the browning.

Taylor Worden of Delish.com shares that in testing their chocolate chip cookie recipe, editor Makinze Gore found definite difference when chilling the dough.

…”she discovered that chilling the dough truly was the difference between a pretty good chocolate chip cookie and the chocolate chip cookie.”

How long should you chill? I’ve seen recommendations for up to 24 hours and others say just a few hours, I’ve personally found that just 15-30 minutes is the sweet spot for my cookies as I don’t like the coconut oil completely hardening.

You can freeze cookie dough to bake later! Place the balls of dough on a cookie sheet and then freeze for 2 hours. Remove and store in a baggie until ready to bake! Make sure you label the bag!
