Double Chocolate Zucchini Bread with Whole Grain Einkorn Flour

This double chocolate zucchini bread recipe made with einkorn flour is the perfect way to use up zucchini and share a special treat. Saying goodbye to the summer garden has been a long drawn out farewell this year. So many zucchini came into our home this last month that I need to use up! The nature of zucchini allows it to take on the flavors with which it bakes, making it perfect for chocolate! Whole grain einkorn flour also works well in this recipe and gives it that extra nutrition boost.

Why Whole Grain Einkorn Flour

Whole grain einkorn works better with some flavors than others. This is especially true combined with rich flavors that contain molasses qualities, such as brown sugars. Where to Buy Einkorn

My favorite place to get einkorn is through Grand Teton Ancient Grains. This company grows there own organic einkorn in the state of Idaho. Not only are they local to our northwest region but they have great quality and customer service. I’ve been so happy with their grain and personal care.

Whole Grain einkorn lends its flavor best to things that offer a deep rich taste. I love to find recipes that work well with whole grain einkorn flour because of the extra nutrition it offers. I grind my own einkorn flour because it is best both nutritionally and financially. The important thing is to use it quickly within just a few weeks. I don’t have a problem with this at all!

I like to get a large quantity of grain for milling and forgo the shipping cost. In autumn I also stock up on their all purpose einkorn flour for holiday and winter baking.

Ingredients for Double Chocolate Zucchini Bread

Wet Ingredients

  • 1 Cup Butter or Oil Melted ( I use coconut)
  • 3 large eggs
  • 4 Cups Zucchini (grated and water drained from it)
  • 1/2 Cup Maple Syrup
  • 2 Cups Brown or Coconut Sugar
  • 2 teaspoons Vanilla
  • 1 Cup Sourdough Starter

Dry Ingredients

  • 4 Cups Whole Grain Einkorn Flour
  • 2 teaspoons Salt
  • 2 teaspoons Baking Soda teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 1/2 Tablespoons Cinnamon
  • 1/4 teaspoon Ginger
  • 1/2 Cup Cocoa Powder
  • 1/2 Cup Chocolate Chips

How to Make Double Chocolate Zucchini Bread with Einkorn Flour

The Recipe

Preheat oven to 375 degrees Fahrenheit.

Yield: 2 Loaves

Double Chocolate Zucchini Bread

Cook Time 1 hour
Total Time 1 hour 20 minutes

Ingredients

  • Wet Ingredients
  • 1 Cup Butter or Oil Melted ( I use coconut)
  • 3 large eggs
  • 4 Cups Zucchini (grated and water drained from it)
  • 1/2 Cup Maple Syrup
  • 2 Cups Brown or Coconut Sugar
  • 2 teaspoons Vanilla
  • 1 Cup Sourdough Starter
  • Dry Ingredients
  • 4 Cups Whole Grain Einkorn Flour
  • 2 teaspoons Salt
  • 2 teaspoons Baking Soda
  • 1 teaspoon Baking Powder
  • 1 1/2 Tablespoons Cinnamon
  • 1/4 teaspoon Ginger
  • 1/2 Cup Cocoa Powder
  • 1/2 Cup Chocolate Chips

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Grate your zucchini squash and encourage it to drain in a colander by sprinkling a pinch of salt on it and mixing in. While the zucchini is draining, start to mix together your ingredients.
  3. Beat together the wet ingredients, adding the zucchini last.
  4. Add the dry ingredients on top and gently mix in until the wet and dry ingredients have come together. Add in half of the chocolate chips and mix in.
  5. Grease two 8.5 x 4.5 inch loaf pans and fill them halfway full of batter. Sprinkle in almost all of the remaining chocolate chips, reserving a few. Finish scooping the batter evenly into each loaf pan before sprinkling the remaining chocolate chips on top.
  6. Bake for 55 -65 minutes or until a knife poked into the center comes out clean.
  7. Allow bread to cool 15 minutes before turning out onto a cooling rack and wait an hour before slicing so bread can cool and hold it's shape. Enjoy!
