Restaurant Style Cast Iron Skillet Oven Fried Potatoes

Why do I call these the BEST fried potatoes? Because these are elevated! I make a lot of fried potatoes for dinners but this is the way to impress both kids and company!

Supper is complete with these cast iron skillet fried potatoes! Made with only a few simple ingredients, these oven fried potatoes are such an easy side to prepare and are perfect for a last minute addition!

This simple side dish is just the thing for your summer barbecues, picnics, birthday parties, graduations! In winter it’s perfect with a hearty meal. Don’t forget to add a dessert like – My Epic Tiramisu Cake or Einkorn Chocolate Chip Cookies.

Bread crumbs make for crispy outer edges when the potatoes are sliced in the skillet and sizzled with the high heat and oil( butter). This recipe is easy to prepare. It’ is both quick and mess free. Prep time is very minimal since there is no pre-cooking required! The best thing is that everything is mixed together right in the skillet, making for easy clean up and less dishes! 

The Benefits of Using Cast Iron

With proper care and maintenance, cast iron skillets are a powerhouse of many purposes, functions and can be used for various cooking methods due to their ability of the iron.

You will loose both flavor, texture and especially that crunch, if you forgo the cast iron skillet. While a basic baking sheet will make you dinner, a cast iron skillet can do it better and here’s why:

Cast iron holds the heat so well you can easily get a good fry on both sides of the potato. While regular baking sheets are an option, I’ve found the cast iron creates an environment that both heats and fries, while holding superb flavor and texture. While it heats up more slowly than copper or aluminum it’s a prize for holding the heat well, making it excellent for searing.

Heats Evenly

Iron skillets are a store house of heat! More than just holding consistent heat, they provide a clean, even heating surface for your food to properly heat on.

Creates a Crispy Edge

While a slow cooker or instant pot will cook edges soft to slightly crisp, the cast iron pan really helps with producing crispy skin as you might find on a bar-b-que.

What kind of Bread crumbs should be used

Homemade bread crumbs are perfect for this recipe! If you have any kind of homemade bread slices like, Einkorn, whole grain or sourdough, sitting around or in the freezer, here is a great way to use them! Homemade bread crumbs are so much healthier for you than store bought bread crumbs with all their preservatives, GMO seasonings and artificial fillers. If you don’t have homemade bread crumbs or don’t wish to use them, store bought work just fine, too!

What kind of potatoes should be used

Almost any type of potato works great in this recipe! 

Some of our favorites are: Yukon gold potatoes, Red potatoes, Baby gold potatoes

Note: Russet potatoes do have a tougher skin and don’t cook up as nicely with the skins on. You can either peel the potatoes first or just use a different type.

Ingredients

2 Tablespoons Butter
Small Onion, Diced
6-8 small-medium Sized Potatoes
2 tablespoons Bread Crumbs
Sea Salt
Black Pepper

Directions

Heat Oven to 450 degrees Fahrenheit.

Place a 10 inch iron skillet into oven to pre-heat.

Chop potatoes into quarters, then slice each piece in half to make eighths. Pat potatoes dry with a paper towel and sprinkle with salt as desired. (Excess moisture will prevent the potatoes from having direct contact with the skillet).

Finely chop onion.

Place 2 Tablespoons butter in cast iron pan to melt for 4 minutes.

Spread butter around in pan.

Take out hot pan and spread chopped onion and potatoes evenly in pan.

Sprinkle with salt and pepper, bread crumbs and paprika.

Bake for 25 minutes, turn vegetables over and bake 10 more minutes. Take out and cool for 5 minutes before serving. Enjoy!

Recipe for Crispy Oven Fried Potatoes in Cast Iron Skillet

Cook Time 25 minutes
Additional Time 10 minutes
Total Time 45 minutes

  • 2 Tablespoons Butter
  • Small Onion

  • 2 tablespoons Bread Crumbs
  • Sea Salt
  • Black Pepper

Notes

This recipe works best when the potatoes are not crowded in the pan.

Tips:

  • For best results, do not stir the potatoes while baking more then once or twice. This allows the edges of the potatoes to get nice and crispy. 
  • Baking the potatoes with high heat helps to give the crispy crunch everyone loves! 
  • A cast iron skillet will give more crispy edges then a glass pan.
  • To reheat any potatoes later, you can use a skillet on the stove top with a little oil or in the oven. (You can add a little extra coconut oil or butter when reheating. )
  • (Microwaving will make the potato edges chewy and tough).

Storing Leftovers

Leftover potatoes can be stored in an airtight container in the fridge for up to a week. Remember to label your container ( I like to use a sharpie on masking tape) with the date so you know if it’s old!
